The Cutting Board Company story
The Cutting Board Company was founded by Ken and Natalie Langley in the Northern Rivers in 2012 and passed onto Simon Lissa in 2025. The company’s ethos is to use natural, sustainable Australian hardwood that withstands years of use, crafting all boards in Australia. Its factory is solar powered and the timber is dried in solar kilns.
The Range – Pro, Chef and Butcher
The boards come in a wide range of different sizes in three thicknesses (Pro 35mm, Chef 40mm, Butcher 60mm). The biggest of these, the Butcher Block and the Chef Series Huge, weigh 15kg each, so you’ll need some serious chef muscle to wield them about!
The reversible boards are all crafted from single slabs of Australian hardwoods including Blackbutt (a soft caramel), Red Gum (a richer maroon) and Spotted Gum (a medium brown with honey tones). As well as the single wood blocks there’s a Butcher Block model that comes in a striped Red Gum/Blackbutt mix. All preserve the wonderful curving sweep of the grains. The wood is naturally antibacterial and gentle on knife-edges.
Unboxing: First Glimpse

Opening the box reveals the Pro Series Medium in Blackbutt, carefully nestled in recyclable packing materials. It has a wonderful scent, having been pre-oiled – some of the oil has soaked into the care advice slip, though the board itself is dry and ready for use.
Using: First Chopping Session

At four kilograms, this is a beautifully solid and heavy board. (I think the 15kg Chef Huge would be well beyond me!) It measures 40 × 29 × 3.5cm. Cutting up an onion on it was a delight. The board stayed firmly in place, the surface feels smooth and strong and didn’t show any signs of knife marks afterwards.
Afterwards it only needed a gentle wipe down and dry – the boards shouldn’t be dishwasher-washed or soaked – and remained pristine in appearance. It’s recommended to oil the board around once a week, using a food-grade oil, or twice-weekly for the first six weeks if you’re in an air-conditioned or hot dry climate.
The Verdict:
What we are Addicted to? The Cutting Board Company boards are a beautiful, high quality and sustainable way to have a professional-grade board in your kitchen. They’d also be wonderful to present food on, such as a grazing platter – particularly the Pro Series Extra Long which is a vast metre in length.
What we need to be more Addicted? This would be a gorgeous Australiana present to gift to relatives overseas to show off the glorious native woods here, but due to the weight it will probably have to remain a gift for local friends and family (and of course for personal use). However, the company also has a Value Range featuring considerably lighter boards, with several just weighing around 1kg.
