Henry Deane at The Palisades launches a new concept in Dining

You know ‘that’ kind of guy…Wit sharp as a Saville row suit, a weakness for embellishment, never seen around Sydney in anything less than a waxed moustache and a crisp collared shirt? Henry Deane is your man. Whilst you’ll be 100 years too late, his ‘high’ standards apply especially now Palisades has a new chef and completely new menu.

Brendan Fong, the chef we adored for bringing us those insane duck pancakes at Mr Wong has brought a new food direction to Sydneysiders inspired by the coastal views.

Henry Deane_foodStart with three perfect golden bullion croquettes filled with smokey eel dip into mayo for the indulgent. A salad of NZ King Salmon, purple wombok, seaweed and enoki is crowned with a tiara of young snow pea shoots. It’s a riot of colour. Juicy NZ mussels are tossed with white wine tomatoes, chilli and garlic, just perfect for dipping chunks of toasted sourdough.  Brussel sprouts could almost be your choice for dessert doused in a caramel and lime sauce with a touch of furikake for that chilli hit. We recommend the cheese platter which will keep you both amused, especially if you order an espresso martini which seems to be the drink of the night.

Henry Deane cocktailsYou can’t enjoy the sunset properly without a cocktail and thanks to a collaboration between Bar Manager Laura Persiani and Matt Linklater from Melbourne’s acclaimed Black Pearl there is a lot to choose from. We can’t go past a good whisky sour and a glass of Louis Roederer.

Pink sofas, soft pebble tones, muslin curtains, rose gold metal embellishments and walls of tiny white hexagonal tiles. Sprawl on a sofa, sit at a high table or even better, grab one of the few spots out on the balcony.

The things we love are all still there – it’s Sydney’s sexiest rooftop majestically perched on the edge of Barangaroo which is now springing to life. Henry Deane has got it all; food, drinks and views – 360 degrees of drop dead gorgeousness across 2 floors – that’s worth coming back for.

About the author

Karen’s corporate job back in the UK had included entertaining clients in some of the best restaurants. This ultimately sparked a curiosity 'Just how do they do that?' (she confesses she was brought up on meat and vegetables, so this was all very exciting). Currently a Mr & Mrs Smith 'Tastemaker', she’s flashpacked around the world, learning about wine, experiencing different cultures and cuisines and had a two- year love affair with it all. And here we…sitting on the balcony drinking a glass of rose surveying our kingdom like a smug seagull. My ears are tuned into the rhythm of the waves. As the sun dips the Norfolk pine trees stretch their shadows. An orchestra of voices rises from below; a shriek of laughter, the odd woof, babble of children playing, chatter - life.
