The Walker Evans Baker Restaurant Group is at it again, down the bottom end of Collins Street. The group is trying to make Collins Square in the Docklands a place to go for great food, great coffee, and mouth-watering desserts. Chiara, the newest venture is joining Long Shot and Bar Nacional in the Collins Square. And helping make it such a destination.
Chiara’s Head Chef, George Fowler is bringing a touch of stardom to the team after leaving his position as sous-chef at Michelin-awarded Pollen Street Social in London to join Chiara. British-born Fowler has worked with many of our great chefs including Jason Atherton (Pollen Street Social), Guy Grossi, and Donovan Cooke.
Fowler has created an Italian menu that offers you a mix of all the favourites. The antipasto section sees seafood fritti, salumi, beef and lamb meatballs, and fresh ricotta. A pizza menu, a hand made pasta menu, and a mains menu sees your more hearty dishes like margherita pizza on organic stoneground pizza bases, and goats cheese gnocchi served with pickled and roasted mushrooms, smoked milk, and black cabbage, as well as lighter dishes like the salmon with lemon capers, tarragon, and broccoli.
Desserts will be created by dessert king Executive Pastry Chef, Shaun Quade. His creations include Licorice ice cream served with warm almond bread, crystallised black olives and mandarin, while the Tiramisu takes on a new look with beetroot, salted coffee, mascarpone, and amadei chocolate.
The space nods to adjoining Goods Shed, a heritage-listed landmark of Melbourne in its design. Exposed beams and steel are seen throughout both buildings. It gives it that nice feeling that they were made to be there.
