Look out latte sippers. There’s a new brewer in Bondi and they’re here to make much more than your humble espresso.
St ALi’s Sensory Lab is expanding beyond the cult caffeine-fuelled streets of Melbourne with its very first Sydney outpost.
Hall Street is now home to the Sensory Lab, where the team including Salvatore Malatesta (owner St ALi); well known Sydney barista, Emily Oak; and World Barista Championship finalist and Australian Barista Champion, Matt Perger take their coffee very seriously. So seriously it’s almost scientific. Expect lab coats and glass flasks in a sleek space and options on the menu using alternative coffee making processes including syphon, pour over and cold drip.
Although this is a café, at its heart the Sensory Lab is a social experiment. Ever wondered what your taste profile was? We figured not, but now you can find out. If you take your beans seriously and you’re sick of randomly picking Nespresso colours, this is the café for you.
Once you’ve worked out your blend, pick up a Penny Four pastry and settle in. If there’s no room, and hey it’s Bondi so that’s very likely, Sensory Lab sells its blends by the bag.
