Sydney’s café culture is insatiable. We’ll wait hours for a table at Grounds of Alexandria and queue up around the street for a coffee from Bourke St Bakery. We just keep going back for more.

The people behind those success stories aren’t content to rest on the laurels of their famous sourdough or lush kitchen gardens; they’re moving onwards and upwards.

Three Williams is the new kid on the block in Redfern – not actually on The Block, but in a converted warehouse space on Elizabeth Street between Cleveland and Redfern Streets.

Glen Bowditch (Sonoma, The Grounds of Alexandria) and Tim Bryan (Aria, Chiswick) know what they’re doing and they’re doing it well.

There’s already a heavy Instagram following (thanks to weekly giveaways), snaps are filled with decadent brioche French toast drizzled in maple syrup, sticky glazed beef short ribs wrapped in flat bread and oh so trendy milk bottles with stripey straws.

The best part – this converted warehouse with its exposed brick walls and industrial chic feel, has plenty of space for us all.
