Move over Mexican, ‘Leoparding’ has hit Sydney. The neo-Neapolitan style Leopard crust pizza is now sliding smoking hot out of the Pizza Bros Gozney ovens at the Grifter Brewing Co Marrickville.
The Pizza Bros are next level pizza passion. Literally bros and even changed their names for their craft, both have worked for many years in two of Sydney’s pizza icons. Joey Pepperoni formerly on the wood fire at much loved Bella Brutta Newtown, Marty McFly down the road at Gigi’s. It’s clear that they have been taught by the best by their technique and taste, now teaming up with the ambition to bake the best pizzas in town.
The Grifter Brewing Co, both brewery and bar is light-filled hipster-industrial chic. Plenty of space for groups to gather, spacious bar, lounge and pool table with a huge range of brews. The pizzeria at the top of the bar is fully exposed so you get to see the bros on the job.
The charred spots on a Leopard crust are deliberate, it’s the result of high hydration dough cooked on white hot heat which gives the finish another depth of smoky flavour. The debate will split the room however between pizza purists and well, inner-westies who are up for flavour adventures and relish insta-worthy experiences.
It’s not all about base. The toppings are a-grade ultra-modern Italian. The Cacio e Pepe dressed in rich cheeses, truffle and topped with burrata is impressive. The Joni Pepperoni is a sensational classic. The Quality Beast, aka meat lovers and the Heart of Gold with artichokes and chili, both with lashings of LP Meats Italian fennel sausage, are show stealers. The award however goes to the Waterworld, yep, surf n turf, but like nothing you’ve had before. Perfectly cooked garlic prawns, crispy pancetta, drizzled with a house made fermented chili sauce is memorable.
Do not be surprised, (even if you are a petite person) that you could be capable of eating a whole pizza on your own. The ratings are in, this is THE best pizza in Sydney right now.
