The Quarryman’s Hotel is kicking some serious Rooftop goals

Quarrymans HotelPyrmont or Palm Springs? The Rooftop at the Quarryman’s Hotel takes us straight to the pool without the long haul flight and we’re not coming home.

You’ll shed a few calories climbing the stairs to the top of Pyrmont’s hottest rooftop but trust us, the view is worth it. Owners Arthur Laundy and Patrick Maguire created this little slice of paradise so the Quarryman’s could offer something for everyone – whether it’s a beer in the pub downstairs or a glass of French Rosé on The Rooftop’s outdoor terrace, they have delivered in spades. All you need to do is slip into chill mode and settle in for an afternoon in the sun.

Designer Matt Wood (Bloodwood) is responsible for Palm Springs-inspired pastel hues and juicy mid-century modernist touches like copper panels, grey stone tabletops, exposed brick, porthole openings and Scandinavian influenced furniture. Bold neon artwork completes the look – it’s all about a fun, summer vibe and CBD views at The Rooftop. The pink DJ booth for chilled afternoon beats is the icing on the cake.

If you’re game, start the merriment with the punchy ‘Palma Rosa’ cocktail, with El Jimador Blanco, rosé, ruby grapefruit juice and ginger syrup, or whet your whistle with a local craft beer like a Young Henry’s. On a summer afternoon you can’t go wrong with a chilled called of Bodvar NO 7 French Rosé. Get snacking starters like moreish buffalo wings dipped in blue cheese sauce, goats curd mushroom bruschetta or the beautifully presented but even better tasting arancini balls.

Pub classics like a chicken parma are still here, but if you’re after something a little more refined, the King Salmon is mouth wateringly delish – served with roasted cauliflower, edamame, quinoa, fried shallots and miso dressing. You’ve already forgotten you’re atop a century old Pyrmont landmark as you laze and graze the day – and night – away!
