Last year when Bills in Woollahra closed, you could hear the sobs of ricotta hotcake-deprived Eastern suburbanites. Where would we brunch on lazy Sundays? Did we really have to drive into Surry Hills or Darlinghurst to get our fix of Bills signature granola? Bill Granger, the self-taught cook behind his namesake restaurants, quickly turned our frowns upside down with the news that his latest establishment will be going seaside. Enter Bills at Bondi, which is now open for business.
With seating for 100 including outdoor dining and bar, there’s plenty of room, which is good news because for the next foreseeable future, this is going to be Bondi’s hottest new addition to its evolving dining scene. The atmosphere is eclectic yet relaxed with a swanky bar ready to mix some killer cocktails. You could easily stay from morning to night here.
The menu remains iconically the same but why mess with perfection? If you need some help ordering, for breakfast you can’t beat the ricotta hotcakes, banana and honeycomb butter, the crisp pork belly and chilli jam sandwich is an unmissable lunch dish and for dinner, try the shrimp burger with jalapeño mayo, radish and sesame gochujang.
As Granger’s new local ‘hood, you know he’s pulled out all the bells and whistles for his latest Bondi restaurant.
