What goes around comes around right? Well, something good is coming back around. St Hotel in St Kilda is reopening after two years. Paul Nguyen and Simon Blacher, team behind the loved Hanoi Hannah, Saigon Sally, and the soon to be open Tokyo Tina are the ones behind giving this St Kilda night spot (formerly The Saint) revamp. What used to be more of a night club is going to become a restaurant, bar, and club, something more in line with the crowds currently frequenting the scene. Across the two stories there will be four different spaces: public bar, dining room, The Supper Club lounge, and a 200 dancer capacity nightclub. Hello 3am.
Chef Sean Judd (Longrain, Chin Chin) is behind the menu, which will be very reasonably priced at $5 to $25. You can expect Chiang Mai hot dogs, caramel pork hock, stir-fried mud crab, larb northern Thai salad, curried barramundi fillet, and coconut braised lamb shoulder. Cocktails will be heavy on rotation, thank goodness.
St Hotel is set to open early November. We’re waiting with breathe that is baited.
