You’re all for ‘provenance’ – whether it’s meeting the farmers whose happy hens have laid eggs for your fry up, viewing the kitchen garden, or running your fingers across the cool, smooth marble table you’re seated at; where only hours ago heaving bodies where pushing, stretching and needing dough. The Darlinghurst pasta darling is bringing chef Eugenio’s special touch of “abruzzese” cuisine (home to Eugenio’s family, north-east of Rome) to Bondi. Look through the glass-fronted Adina Complex and you’ll find tables adorned with white cloths, walls with chalk boards and racks of drying pasta art-like installations.
You won’t be able to resist diving into their signature Pappardelle, it’s enough to make men go weak at the knees as perfect al dente ribbons do a breast stroke in a red wine sauce with wagyu beef shin. Lighter dishes such as milky stracciatella di burrata dotted with grapes, zucchini flower and pickled shallot, and white polenta with drops of spanner crab and a hit of preserved lemon provide seaside dining highlights.
So break some focaccia with someone you love, or make new friends ‘a Tavlova’ at the table. It’s where the action is and will continue to be for generations to come.
