Who is Ms Collins? A French Socialite you want to be friends with. The kind of woman who knows more secrets that you ever will, and has seen things you don’t even know happens. One of those.

Along with Roar Projects, Blackmilk Interiors was in charge of the design, which goes from pink hue to pink hue. Dark booths are perfect for those bottle service nights, and tongue in cheek neons in the bathroom make sure you’re not taking yourself too seriously. Bespoke art by street artist, Juan Mcarb finishes the elaborate design in this heritage-listed building.

The cocktails have rather interesting names with the Invasion Epernay, a mix of Broken gin, Parisian Absinthe, all spice, lemon juice, and sparkling wine, while the bottle service menu goes big with Dom Perignon 2003 Luminous Magnum making an appearance at $1200.

The food takes things outside the box with four of Melbourne’s most celebrated chefs, putting up five dishes to create a 20-dish menu.  Chefs include Jacques Reymond, Daniel Wilson (Huxtable), Paul Wilson (Icebergs) and Ricardo Momesso (Valentino Restaurant).

After serious drinks and delicate eats, Ms Collins turns into a club of sorts with a suspended DJ stage.
