Huevos sunrise
For a breakfast with flavours south of the border, head to Bondi’s Panama House. Wrap your laughing gear around the huevos (eggs) rancheros. Think house made tortilla with black beans, smashed avo, smoked tomato salsa and poached eggs topped with chipotle hollandaise sauce. Cracking coffee, reggae tunes and a solid menu (including stalwarts like oven baked sweet corn fritters with poached egg and tequila spiced gravlax salmon) are good reasons to go again, and again…

Good ol’ bacon & egg roll
If you think you have eaten a good bacon and egg roll…think again. It took Bowen’s months of research to perfect the wafer thin bacon (which is marinated in port sugar and mango) that crisps in nano seconds and boasts soft charred edges. Eggs are cooked in rings and gently broken to avoid any molten lava accidents – oh, how thoughtful! Brave the queues, order, stand and slam. Now, that’s how it’s done – Bowen’s style.

Sweet tooth
We all know Bills is God when it comes to bressert (breakfast meets dessert) with his quintessential ricotta hotcakes and honeycomb butter. But if you’re looking to branch out, try Revolver’s ricotta hotcakes with rhubarb and strawberry compote and maple ricotta or head to North Bondi for a healthy (gluten free) pancake with yoghurt and fresh berries at Jo & Willys Depot.

Breakfast tagine
Kazbah
is king when it comes to the breakfast tagine. Queues out the Balmain door at a weekend are the norm (tip: head to their quieter Darling Harbour or Ryde locations) where hungry punters await their serve of either lamb mince and sucuk tagine or pumpkin and feta. Both come brimming with spinach, caramelised onion, roast tomato, roast capsicum, eggs and feta.  If you can accost eight friends (or pull them from the street) the group breakfast is a Turkish feast.

eggs benny is the ultimate food porn – sexy and luscious, perfectly poached free range eggs and bacon are caressed with silky warm hollandaise. Elegant service and surroundings make this a breakfast you’ll remember. If you crave salmon, the new signature brekkie at Hilton’s Glass Brasserie is a must – house smoked beachwood salmon is paired with smooth english potato scones, pan roasted asparagus and free range scrambled eggs.

Weekend getaway
Sayonara Sydney and hello weekend getaway! Drive 2 hours south and stop at the Berry Sourdough Cafe for morning glories like poached eggs with house made baked beans and chorizo, and toasted brioche with poached fruit and whipped butter. Head a further 60 minutes south and make a beeline for Pilgrims in Milton – a Vegetarian café that pumps out some of the best brekkies you’ll ever have. Don’t go past the pancakes with fresh banana or berries and maple syrup, or poached eggs with mushrooms, pesto and parmesan. Grab a muffin on your way out – be quick though, they sell out as soon as they hit the counter.
