Under nine white flowing curtained cabanas on Darling Harbour’s waterfront, a Bungalow 8  portal awaits to transport you and your crew to Mexico. Lean back into the bright Aztec cushions, sip on a frozen margarita and you’ve got the perfect weekend getaway, with only a bus or train fare to get you there.  

Bungalow 8 has called this summer-long pop up Margarita Mansion, and the frozen cocktail menu uniquely pairs natural fruit flavours with herbs and spices. There’s the Bhang Bhang (strawberry and lemongrass), Sexico (watermelon and basil), Mango Fuego (mango and jalapeno), Pineapple Mansion (pineapple and mint), Loco Coco (coconut and pandan), Tequila Thyme (grapefruit and thyme). A standard frozen drink is available for $18 or $24 for the Mega Frozen, which can be enjoyed amongst friends. These pretty coloured frozen drinks taste like summer and will certainly make for a refreshing, and memorable, afternoon.

Accompanying the drinks is a menu inspired by the spice of Mexico. The standout amongst the extensive list is the jalapeno poppers, because they are made in house and not the frozen kind you may find in other venues. 

The tacos ($7.50 each) have a gluten free option too, which makes Mexican accessible for all.  There is four different filing options including mung beans, avocado, wagyu steak and pork. The standout taco is the Wagyu Beef, which is served with roja and peppers. Of course no Mexican fiesta would be complete without a side of guac – Bungalow 8’s must try Guac Cart  moves around the venue to make freshly smashed guacamole tableside, served with tortilla chips for $14.

Bungalow 8 has also introduced a new order at table experience, all you need to do is scan the QR code to see the visual menu to order and pay on your phone. All drinks and food will be brought straight to you, no need to leave your seat and miss a minute of conversation. 

For those visiting on the weekend, diners can feast on Margarita Mansion’s Bottomless Brunch which includes endless tacos and margaritas for two hours, $60 per person from 1pm or 3pm and we can’t think of any reason to not do this.
