What could be more adult than learning the secrets of one of the most fetishised foodstuffs on the planet?

The Sydney Chocolate School is located in a veritable den of iniquity, the Coco Chocolate Studio. Manned by Rebecca Knights-Kerswell, a skilled graduate of European cacao tradition, the shop is stocked to the rafters with real organic chocolate in its many glorious forms.

Take a class – either the full day, half day or mini classes that go for an hour – and you’re sure to walk away with a greater appreciation of the work that goes into a moment’s pleasure.

You will learn how to hand temper on marble, make bars, mould chocolates, make fruit filled broken chocolate, create rose creams with crystallised rose petals and hand flake your own hot chocolate.

An advocate for organic farming, ethical trading and the use of non-GM ingredients, you can rest easy – or wallow, as it were – in the knowledge that your chocolate hit has innocent origins.

Walk away with sticky fingers and a bag full of goodies, and cherish your new found appreciation for all things cacao.
