Salumi is a wonderful thing. Home-made authentic Italian salumi is even better. And that’s what you’ll find at North Melbourne’s latest Salumi bar Saluministi. Opened by business partners and brothers-in-law Frank Bressi and Peter Mastro, there is a lot of authenticity behind this one. The pair has been making salumi for eight years and have been selling porchetta and pork sausage panini’s at the Melbourne Salami Festa for a while now.
The space they’ve taken up is a semi permanent home in North Melbourne and was once a printing press. Sadly for salumi lovers in March 2016 it’s rumoured to be turning into apartments. But for now, it’s the home of salumi and other Italian treats the duo loved from their childhood.
The warehouse style space, which has been fitted out by Bressi himself, has a big frontage with a roller door painted black and plastered with big white letters placed between a whole lot of brick. Once you walk in you’ll find communal tables, woods, concrete, and cute wall hangings and plants that make the open space that little bit more homely.
The menu reflects the families of the owners. Paninis are filled with a range of things. The Salsiccia is a mix of grilled pork and fennel sausage, roasted peperonata, pecorino cheese, and rocket, the Cotoletta is packed with crumbled free range pork loin, vincotto mayo, Italian coleslaw, and Provolone cheese, while the Porchetta is a combination of free range slow roasted pork, artichoke paste, Pecorino cheese, and rocket. Salads, polenta sticks and fries with herbs and Reggiano cheese round out the menu.
The coffee comes in the form of Caffettiera’s of varying sizes. One to six cups of the good stuff on offer. This will go nicely with the rotating sweets like the house made bomboloni and ciambello.
