What do you get when you combine a rum den with a busy harbour? No, not the Pirates of the Caribbean. Hacienda is the brand new Cuban themed bar perched on the first floor of the Pullman Quay Grand Sydney Harbour, and is taking seaside cocktails to a whole new level.

It doesn’t matter how long you’ve lived in Sydney, how many times you’ve watched fireworks cascade off the Harbour Bridge or seen the sails of the Opera House light up, there’s just something about the view down at Circular Quay that takes your breath away.

And at Hacienda, you get to soak up that view with a tipple or two away from the crowds and seagulls. The first thing you’ll notice when you walk through Hacienda’s doors is the view – big windows (that will be opened right up in Summer) look down on the Quay all the way to the bridge.

And then you’ll notice the faux flora dripping from the ceiling, and then the fabulous Miami-esque pastel green and pink furniture. Hacienda has created a very grown up garden party that’s calling out for cocktails – which is no surprise, given Applejack Hospitality, the team behind Bondi Hardware, The Butler and Della Hyde, has had an input into setup.

Quench your thirst with a very generous flaming Cubano Punch or go straight to the Salted Coconut Espresso Martini that’s already got the town talking. There’s a healthy wine list, with a mix of local, Spanish and American drops available by the glass or bottle, and plenty of rums and American whiskeys behind the bar.

When it comes to food, they’ve stayed on theme. Snack on chunky yuca fries with red pepper sauce, or nibble on dainty pao de quejo tapioca cheese bites, before moving on to beef and guacamole empanadas, and jerk chicken sliders.

Date night, dinner, afternoon business drinks, or even just a spot of sightseeing, this hotel bar has upped the stakes for Sydney’s drinking scene.
